Lentil Curry Recipe
- Ingredients for 2 people:
- 2 Cups rice
- 1 Cup red lentils
- 1 large onion
- 1 clove garlic
- 2 Tablespoons butter
- 1 Tablespoon flour
- 1 Tablespoon curry powder
- 1/2 Cup raisins
- Salt
- Pepper
- Chutney
- A lentil looks something like a flattened pea. It is close to a small bean in size but easier to cook.
- Wash and soak 1 cup lentils for 2 hours in fresh water.
- Put the lentils in 2 cups lightly salted water and simmer for 20 minutes. Save the lentil water.
- Chop up a large onion and a clove of garlic and sauté them in 2 tablespoons butter or margarine in a frying pan until translucent. Then add 1 tablespoon flour and 1 tablespoon curry powder. Season with salt and pepper.
- While stirring, gradually add 1 cup of the reserved lentil water from step 1. Simmer for 15 minutes or until the curry is thick.
- Add the lentils and ½ cup raisins to the sauce, simmer for 10 minutes, and serve with rice and a few spoonfuls from a bottle of chutney.
